Lemon Chicken Orzo Soup Recipe

 Ingredients:

  • 3 tablespoons olive oil 

  • 1 cup dry orzo pasta 

  • 6 cups chicken broth/stock 

  • 2 full LaBelle Patrimoine chicken breast, shredded and chopped 

  • 1/2 cup shredded carrots 

  • 1/2 cup chopped celery 

  • 1/2 yellow onion, diced 

  • 3 garlic cloves, minced 

  • 1/4 cup chopped fresh cilantro 

  • 2 lemons, juiced 

  • 1 small lemon, chopped into wheels for topping

    Seasoning: 

  • 1/2 tsp dried oregano 

  • 1/2 tsp lemon pepper

  •  1 tsp salt 

  • 1/2 tsp pepper 

  • 1/4 tsp paprika 

    Optional Toppings:

  • Parmesan cheese 

  • Drizzle of extra virgin olive oil

Instructions:

1. In a large pot, heat the olive oil over medium heat. 

2. Add the diced onion, shredded carrots, chopped celery, and minced garlic. Sauté until the vegetables are soft. 

3. Pour in the chicken broth and bring to a boil. 

4. Add the orzo pasta and cook according to package instructions until al dente. 

5. Stir in the shredded chicken, lemon juice, and seasonings. Mix well. 

6. Simmer for an additional 5 minutes, allowing the flavors to meld.
