Recipe: Cheesy Chicken Meatloaf

Tonight’s dinner is all about comfort food with a cheesy twist! Here’s a delicious recipe for Cheesy Chicken Meatloaf that’s sure to impress.

Ingredients:
- 1 lb LaBelle Patrimoine ground chicken
- 1/2 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese (for extra cheesiness!)
- 1 egg, lightly beaten
- 3 cloves garlic, minced
- 1/2 small onion, finely diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil

For the Garlic Parmesan Topping:
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tbsp melted butter

Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, combine all meatloaf ingredients. Mix until just combined—don’t overmix!
3. Shape the mixture into a loaf and place it in a greased baking dish.
4. In a small bowl, mix the topping ingredients and sprinkle over the meatloaf.
5. Bake for 45-55 minutes or until cooked through (internal temp of 165°F). Use probe to ensure the correct temperature.
6. Let it rest for a few minutes before slicing.
