Recipe: Butter Chicken

Ingredients:

Marinade Ingredients:
• 1 lb boneless chicken, cut into pieces
• 1 cup plain yogurt
• 2 tbsp lemon juice
• 2 tsp garam masala
• 1 tsp turmeric
• 1 tsp chili powder
• Salt to taste

Curry Ingredients:
• 2 tbsp butter
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 tbsp ginger, minced
• 1 can (15 oz) tomato puree
• 1 cup heavy cream
• 1 tsp sugar
• Additional garam masala for garnish
• Fresh cilantro for garnish

Instructions:

1. Marinate the Chicken: In a bowl, mix yogurt, lemon juice, garam masala, turmeric, chili powder, and salt. Add the chicken pieces and coat well. Cover and marinate for at least 1 hour (or overnight for best flavor)

2. Grill the Chicken: Preheat your grill. Grill the marinated chicken pieces for about 5-7 minutes on each side, until fully cooked and charred. Set aside.

3. Make the Curry: In a large pan, melt butter over medium heat. Add chopped onions and sauté until golden brown. Stir in garlic and ginger, cooking for another minute.

4. Combine: Add tomato puree and cook for 10 minutes. Stir in cream, sugar, and cooked chicken. Simmer for 10-15 minutes, allowing flavors to meld.

5. Serve: Garnish with additional garam masala and fresh cilantro. Serve hot with rice or naan.
