Recipe: Pollo en Salsa
Ingredients:
1 whole LaBelle Patrimoine heritage chicken, cut into pieces
3 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 red bell peppers, diced
2 green bell peppers, diced
6 tomatoes, chopped
1/3 cup tomato paste
2 cups chicken broth
2 teaspoons ground cumin
2 teaspoons dried oregano
1.5 teaspoons ground achiote (annatto)
2 dried guajillo peppers
Salt and pepper to taste
Fresh cilantro, chopped, for garnish
Instructions:
Cut up chicken into pieces
Chop and combine non-chicken ingredients into pan and sauté
Purée ingredients
Braise chicken in puréed sauce on low for at least one hour and serve!
